Love polvorones? Want to show off your baking skills? Or just looking for something new to make with your pan dulce? Try out this cheesecake recipe, it uses our polvorones as the base for an amazing crust!
Crust ingredients
2 Polvorones
3 Tbsp butter - melted
Filling ingredients
8 oz cream cheese
1/4 cup sugar
2 Tbsp sour cream
Zest of 2 oranges
1 egg
1/8 tsp salt
Yield: 8 mini cheesecakes
Directions
Pre heat your oven at 325°F
To make the crust:
In a mixing bowl, crumble the polvorones and add melted butter. Mix until they clump together. Line muffin pan pits with paper liners and add crumb mix to the bottom, about 1/4 in thick.
Bake for 7 minutes and set aside.
To make the filling:
In the bowl of a standing mixer (or in a bowl with a hand mixer) soften the cream cheese.
Add sugar and mix until creamy.
Scrape the sides of the bowl and add sour cream, salt, orange zest and continue mixing.
Add egg and mix until fully combined
Assembly:
Pour filling into muffin cups, and bake for 18 min. The filling should be set, and no longer jiggly.
Cool at room temperature for 15 min, transfer to the fridge and allow to cool for 2 hours.
Take out of muffin pan and peel paper liners.
