Wanting to do something fun with your teleras? Molletes are the ideal way to use them. Perfect for breakfast or lunch, this cheesy toast/open sandwich hybrid will make your day. Find the recipe below!
Ingredients
1 telera
1 tablespoon butter
1 cup refried beans
1 cup of your favorite melty cheese, shredded
pico de gallo
For the Pico de Gallo
2 roma tomatoes
1/2 white onion
1 jalapeño
1/4 cup cilantro
1 avocado
1 lime
salt & pepper
Instructions:
For the Pico de Gallo:
Dice the tomatoes, onions, and avocado in half-an-inch squares.
Mince the jalapeño.
Chop the cilantro.
Mix it all together; juice the lime; and season it with salt and pepper.
Let all flavors marinate for 15 minutes.
To assemble the molletes:
Preheat your oven or toaster oven to 350F.
Cut your telera in half. Spread the butter evenly in both halves, and put them in the oven/toaster oven for 5 minutes or until the bread is golden brown.
As soon as they are out of the oven, spread the refried beans on top.
Top them with the shredded cheese, and put them back in the oven for 5 minutes or until the cheese has melted.
Finish with the pico de gallo, and enjoy!
